Favorite Veg

For almost two months now, Mike and I have been on a diet.  Not a fun diet, but a diet none the less.  We have done very well, but have been forced to give up a lot of our favorites.  Our current diet is dairy (almost) and gluten free, so our options have been quite limited.  I have been making lots of salads and this:

I love, love, love asparagus!! And my new favorite way to make it is to drizzle it with a little bit of olive oil,  sprinkle some kosher salt and pepper and put in the oven (400) for about 15-20 minutes.  I know, it sounds like a long time.  But, you end up with this

You can't tell from looking, but these little tidbits are sooooooo yummy!  They get crunchy and salty.  Yum.  For now, it's the little things!  I know that my hubby doesn't share my affinity for asparagus.  The first year we were married, I made so much of the stuff that he told me he would throw it at me if I made it again.  Can you imagine??  However, the trick is to put them on a diet.  That way they never complain about food.  No matter what it is.

  2. Nikki, the gluten and dairy thing only lasted about two months! I just couldn't see living that way forever. Amen to those who do!
